Første gang vi så Cuvée Elisabeth var tilbage i 1988, hvor man ønskede at sende en hyldest til den ene af husets grundlæggere, Elisabeth Salmon.

Du får her en champagne med det helt rigtige udtryk, hvor laksefarven i glasset følges op af små perler samt en fin mousse. Lyse røde bær, roser og citrustuner fylder næsen mens lyse ferskner og søde makroner folder sig ud i duften. Smagen domineneres af mandarin, moden nektarin og en snert af cedertræ. En elegant, præcis og aromatisk champagne.

Druerne til denne champagne kommer fra de bedste Grand Cru marker i Champagne og er bygget på både Pinot Noir, Pinot Meunier og Charodnnay.

Aromas of red berries, orange rind, dried flowers, warm brioche and spices introduce the 2007 Brut Rosé Cuvée Elisabeth, one of the highlights of this tasting chez Billecart. It's full-bodied, broad and vinous, with an enveloping attack and a bright underlying spice of acidity, revealing plenty of chalky dry extract and concentration, concluding with a long and precise finish. Despite the style of the vintage and the fact that malolactic fermentation was largely blocked, this is quite a textural, powerful wine.

Billecart-Salmon is discreetly but significantly evolving. Since 2010, a new cellar has housed some 400 barrels for vinification and élevage, and since 2018, another cellar is home to oak foudres retaining some 80,000 liters of reserve wine. Meanwhile, Billecart's wines are spending longer and longer sur lattes, and fruit sourcing is changing—with more grand cru fruit replacing premier cru fruit—while volumes remain the same. Based on the trials underway in their emblematic Clos Saint-Hilaire, the next frontier will be the vineyards. This visit and tasting with Mathieu Roland-Billecart and chef des caves Florent Nys underscored the impact of these quiet but important changes, and it's clear that this is a house that's going from strength to strength. I'll be reporting on Billecart-Salmon in greater depth in the future, but for now, all these recent releases come warmly recommended.
